Friday means WEEKEND!

I only work Mondays and Wednesdays, but I still LOVE the weekend!

Fridays are usually time that I get to spend with just Kamdin while Harlee is in school, but last night she told me she didn't feel good and the same thing followed this morning. I decided to go ahead and keep her home and low and behold, she IS sick. Her fever went up to 103 degrees. I finally caved and gave her some meds this evening because she was complaining and whining and I felt bad for her. Well, her fever broke and she is back to normal at 9pm! :)

Boring Friday for us because of her feeling this way. Hopefully tomorrow she will wake up feeling refreshed so we can go do something (not sure what yet!)

Snacks!

Harlee is SUCH a snacker, she would much rather snack than eat a meal (which I don't allow!). I am sick of buying snack foods because as a whole, they are not as healthy as something I can come up with at home.

Yesterday, via Carly (again!), I found this fun, healthy and yummy recipe.

Crunch Apple Rings

I made one for each of my kids this morning and they both ate them right up and Harlee even came up to me after and said, "those were good"!

I have the rest of the cut apples in the fridge soaking in water (to avoid browning) for this afternoon's snack!

Thanks again Carly for sharing all of your great ideas!!!

In the crockpot and oven

I am sitting here eating my new favorite snack which consists of a cut up apple, cut up banana mixed in with some fat free vanilla yogurt! SUCH a good afternoon or evening snack!

In the crockpot I currently have a chuck roast. What are you doing with that, you may ask? Well here it is!

Shredded Beef Filling

I am not 100% sure what I will do with this, but I will definitely be putting some in the freezer to pull out when we want it!

And in the oven...MUFFINS! These muffins are HEALTHY even!

Cinnamon Oatmeal Applesauce Muffins

Ingredients

1 cup old fashion rolled oats (not instant)
1 cup non-fat milk (I didn't have it so I used vanilla soy)
1 cup whole wheat flour
1/2 cup brown sugar (trying to replace sugar with agave nectar so I used 1/3 cup agave)
1/2 cup unsweetened applesauce
2 egg whites
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (I went without the salt, we will see how this turns out!)
1 tsp. cinnamon
1 tsp. sugar
raisins or dried cranberries or nuts (optional)

Directions
Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together.
Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Combine the cinnamon and sugar and top each muffin with some of the mixture. (I omitted this to save on calories!)
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.

I am going to keep 6 out and freeze the other 6 for when we are in a hurry and need something quick!

WOW, it has been a LONG time!

Ok, my friend Carly recently started blogging about recipes and got me motivated on a couple different levels...

1) Blogging again
2) Baking and cooking more from scratch!

With that said, I am going to change the direction of this blog just a little bit. I will still be posting pics of the kids, when I get a chance and letting you know what is going on with us, but I am also going to let you all know what new things I am baking!

Hope you all enjoy :)

What is up with the Millers...

Not a whole lot, which is why I haven't posted anything :)

It has been SO hot here lately that I haven't felt like doing anything, but sit still. Like I can just sit still with a 3 year old and a 6 month old, YES, that is right Kamdin is now 6 months old! I need to take some 6 month pictures of that little man. At 6 months old Harlee was sitting up on her own (Kamdin is not) so I got some cute ones of her...I don't really want to take more laying down pics of him. I should prop him up or something, hmm???
Took the kids to the fair. It was 101 degrees outside, kindof crazy! It is raining here now, which is REALLY nice and is cooling things off FINALLY. Our house might be below 80 tomorrow, WOW that would feel great!

Ok, enough complaining about the heat. I will add a couple pictures...

LAZY

Ok, I think LAZY sums it all up. There has been a bit of busy-ness in there too, but mainly laziness is why I haven't posted in a couple months.

I am hoping to get back into blogging and keep up with it. Right now I am typing funny because I burned my finger on some hot glue, blah!

Here are a couple recent pics of the kids and a link to a video of Kamdin...
