Harlee requested meatloaf a couple nights ago so that is what I (maybe Dustin) will be making.
Here is my own meatloaf recipe:
1lb of ground beef
1 egg
1/2 cup of oats
approx 2T of ranch
1T minched garlic
1T chopped onion
Sprinkle of dill seasoning
Mix all of the ingredients together, put into a loaf pan, squeeze some ketchup on top and bake at 350 until done.
Honestly, the dill seasoning makes it taste SO good!
Along with meatloaf tonight, I am going to make cornbread. Because I have it in the cupboard, I will be using a boxed one this time :)
Mmmmmm...I can't wait to eat!

Slacker making a comeback...
I have been slacking on my baking, but today I am back in the kitchen.
This morning I made cupcakes to decorate at mom's group, but Kamdin got sick so we frosted them here at home with some homemade buttercream frosting, yum!
Right now I have 2 mini loaves of a modified version of Chocolate Peanut Butter Banana Bread
And tonight for dinner we are making homemade pizza's using this Pizza Crust
Besides Kamdin being sick, it is a pretty good day here at the Miller house :)

Grocery Shopping
I normally don't mind grocery shopping, but today I was dreading it. Kids still not feeling well so I was a little nervous about how it would go. Well, it went great! They were very good which made my trip out pleasant!
I went to grocery outlet, which doesn't happen all that often, but thought I would see what great deals they have right now. I got a few different thing, but the best deals were a spritzer salad dressing...RANCH!!! For $.99!!! And a box of ritz, but generic brand, also for $.99!
From there we went to Costco for eggs and milk. Honestly, can you really go into Costco and come out with just eggs and milk...of course not! I didn't get anything new or fancy, just some of my normal stuff that I had forgot we were out of until I was there.
So onto a recipe...
A couple days ago I put a pork roast in the crockpot with some Mexican seasoning, then shredded it, left some in the fridge and froze the rest.
Tonight for dinner I am going to mix the pork from the fridge with some mixed peppers and onions, shred some cheese and wa-la, fajitas! Nice and easy for a cool rainy day! I am going to have a salad with my new ranch spritzer :)

Friday means WEEKEND!
I only work Mondays and Wednesdays, but I still LOVE the weekend!
Fridays are usually time that I get to spend with just Kamdin while Harlee is in school, but last night she told me she didn't feel good and the same thing followed this morning. I decided to go ahead and keep her home and low and behold, she IS sick. Her fever went up to 103 degrees. I finally caved and gave her some meds this evening because she was complaining and whining and I felt bad for her. Well, her fever broke and she is back to normal at 9pm! :)
Boring Friday for us because of her feeling this way. Hopefully tomorrow she will wake up feeling refreshed so we can go do something (not sure what yet!)

Snacks!
Harlee is SUCH a snacker, she would much rather snack than eat a meal (which I don't allow!). I am sick of buying snack foods because as a whole, they are not as healthy as something I can come up with at home.
Yesterday, via Carly (again!), I found this fun, healthy and yummy recipe.
Crunch Apple Rings
I made one for each of my kids this morning and they both ate them right up and Harlee even came up to me after and said, "those were good"!
I have the rest of the cut apples in the fridge soaking in water (to avoid browning) for this afternoon's snack!
Thanks again Carly for sharing all of your great ideas!!!

In the crockpot and oven
I am sitting here eating my new favorite snack which consists of a cut up apple, cut up banana mixed in with some fat free vanilla yogurt! SUCH a good afternoon or evening snack!
In the crockpot I currently have a chuck roast. What are you doing with that, you may ask? Well here it is!
Shredded Beef Filling
I am not 100% sure what I will do with this, but I will definitely be putting some in the freezer to pull out when we want it!
And in the oven...MUFFINS! These muffins are HEALTHY even!
Cinnamon Oatmeal Applesauce Muffins
Ingredients
1 cup old fashion rolled oats (not instant)
1 cup non-fat milk (I didn't have it so I used vanilla soy)
1 cup whole wheat flour
1/2 cup brown sugar (trying to replace sugar with agave nectar so I used 1/3 cup agave)
1/2 cup unsweetened applesauce
2 egg whites
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (I went without the salt, we will see how this turns out!)
1 tsp. cinnamon
1 tsp. sugar
raisins or dried cranberries or nuts (optional)
Directions
Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together.
Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Combine the cinnamon and sugar and top each muffin with some of the mixture. (I omitted this to save on calories!)
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.
I am going to keep 6 out and freeze the other 6 for when we are in a hurry and need something quick!

WOW, it has been a LONG time!
Ok, my friend Carly recently started blogging about recipes and got me motivated on a couple different levels...
1) Blogging again
2) Baking and cooking more from scratch!
With that said, I am going to change the direction of this blog just a little bit. I will still be posting pics of the kids, when I get a chance and letting you know what is going on with us, but I am also going to let you all know what new things I am baking!
Hope you all enjoy :)
